Stockton University’s $910,000 Maple Syrup Project Teaches ‘Political Economy’.

Last week, NJ’s Stockton University proudly announced the fourth year of its maple syrup program.

Since 2021, two Stockton professors spent roughly $137,000 each year to have their environmental studies students produce maple syrup from trees near the campus. In 2021, they made 11 gallons of syrup for $12,455 per gallon. Last year, they made 22 gallons for $6,227 per gallon.
